I know I've written about my mom-in-law's Feather Pancake recipe before, but it really is the best. Kris just made the recipe with whole wheat flour and they were still the lightest, fluffiest things on the planet (aside from actual baby bird feathers).
Marilyn's Feather Pancakes
1c. flour
2 TB baking powder
2 TB sugar
1/2 tsp. salt
1 egg
1 c. milk
2 TB oil
Mix dry together, add wet and stir until mixed. Stir again as needed if mix puffs up (and it will) then griddle as usual.
